At its heart, the famous walled medina of Old Fez, FĆØs el-Bali, has changed little over the centuries and starkly contrasts the French-inspired ā€œVille Nouvelleā€ built pre-independence in the 1950s. For visitors, Old Fez is the place to start, a UNESCO World Heritage site and a substantial introduction to the ancient Arab world. As you pass through the Bab Boujeloud gate, you enter a labyrinthine clutter of medieval mosques, palaces and riads set amidst an intoxicating atmosphere of markets, souqs, workshops and tanneries. Narrow alleyways reveal charming squares and fountains while all around the bustle of daily life interwoven with exotic ingredients, heady scents and colourful bazaars.
