Eating is a national pastime in Macedonia. Locals gather around kitchen tables and in cosy ākafeanasā (taverns) to feast on fragrant stews, pastries and salads, often washed down with a glass of wine from the Tikves Valley. It draws heavily on Balkan and Mediterranean influences and is packed full of garlic and herb flavours.
